📲𝐀𝐧𝐝𝐫𝐨𝐢𝐝 –
📲𝗶𝗢𝗦 –

Preparation time 10 minutes
Cooking time 35-40 minutes
Serve 2-4

For Mutton Marination
1200 gram Mutton (with bones) मटन
¼ cup Mustard oil, सरसों का तेल
Salt to taste, नमक स्वादअनुसार
1 heaped tbsp Ginger Garlic paste, अदरक लहसुन का पेस्ट
2 medium size Onion paste, प्याज का पेस्ट
½ tbsp Degi red chili powder, देगी लाल मिर्च पाउडर
½ tsp Turmeric powder, हल्दी पाउडर
1 ½ tbsp Coriander powder, धनिया पाउडर
4 Green cardamom, हरी इलायची
1 Black cardamom, बड़ी इलायची
4-5 Cloves, लॉन्ग
2 tbsp Mustard oil, सरसों का तेल

For Potato Marination
2 medium size Potatoes, peeled, cut into quarter, आलू
1 ½ tsp Mustard oil, सरसों का तेल
Salt to taste, नमक स्वादअनुसार
A pinch of turmeric powder, हल्दी पाउडर
A pinch of degi red chilli powder, देगी लाल मिर्च पाउडर

For Mutton Masala
2 tbsp Coriander seeds, धनिया की बीज
1 tbsp Black peppercorns, काली मिर्च के दाने
4-5 Black cardamom, बड़ी इलायची
5-6 Cloves, लॉन्ग
½ tsp Cumin seeds, जीरा
10-12 no. Dry fenugreek seeds, मेथी दाना
½ tbsp Salt, नमक स्वादअनुसार
1 tbsp Stone flower, दगड़ फूल
1 inch Cinnamon stick, दालचीनी
2 Bay leaf, roughly torn, तेजपत्ता

For Ginger Garlic Paste
8-10 Garlic cloves, लहसुन
2 inch Ginger, peeled, slice, अदरक
2 Green chillies, broken into half, हरी मिर्च

For Tempering
1 ½ tbsp Mustard oil, सरसों का तेल
¼ cup Oil, तेल
1 inch Cinnamon stick, दालचीनी
1 Bay leaf, तेजपत्ता
1 Dry red chilli, सूखी लाल मिर्च
Prepared Ginger Garlic Paste, तैयार किया हुआ अदरक लहसुन का पेस्ट
6 small Onions, roughly slice, प्याज
Marinated Mutton, मैरीनेट किया हुआ मटन
1 ¼ cup Curd, beaten, दही
2 tbsp fresh Mint leaves, roughly torn, पुदीने के पत्ते
2-3 cups Water, पानी
Marinated Potatoes, मैरीनेट किया हुआ आलू
1 tbsp Prepared Masala, तैयार किया हुआ मसाला
2 tbsp Coriander leaves, chopped, धनिया पत्ता
1 inch Ginger, julienned, अदरक
1 tsp Lemon juice, नींबू का रस

For Garnish
Coriander sprig, धनिया पत्ता
Ginger, julienned, अदरक

For Mutton Marination
In a bowl, add mutton with bones, mustard oil, salt to taste, ginger garlic paste, onion paste, degi red chili powder, turmeric powder, coriander powder, green cardamom, black cardamom, cloves, mustard oil and mix everything well.
Let it marinate for 10-15 minutes.

For Potato Marination
In a bowl, add potatoes, mustard oil, salt to taste, turmeric powder and degi red chili powder.
Mix it well and keep aside for further use.

For Mutton Masala
In a pan, add coriander seeds, black peppercorns, black cardamom, cloves, cumin seeds, dry fenugreek seeds, salt, stone flower, cinnamon stick and bayleaf.
Roast the whole spices for 20-30 seconds or until fregrant.
Transfer it into a grinder jar and grind into a fine powder and keep it aside for further use.

For Ginger Garlic Paste
In a mortar pestle, add garlic, green chillies and ginger.
Crush it into a coarse paste and keep aside for further use.

For Tempering
In a sauce pot, add mustard oil, refined oil, cinnamon stick, bayleaf, dry red chili and prepared ginger garlic paste. Saute it for 5-10 seconds.
Now, add onions and saute them for 2-3 minutes or until onion turns golden brown.
Add marinated mutton and keep sauteing for 5-10 minutes. Add curd and mix well.
Add mint leaves and cover it with a lid. Let it cook for 2-3 minutes on low flame.
Add water and cover it with the lid and cook it for 20-25 minutes.
Now, add marinated potatoes and mix it well.
Transfer the mutton into a pressure cooker and cook for 2-3 whistles.
Now, add mutton masala, coriander leaves, ginger and lemon juice.
Once the mutton is cooked well, transfer it into a serving bowl and garnish it with coriander sprig and ginger juillined.
Serve hot with roti or rice.
