VEG FRIED RICE + POT RICE
Preparation time 10-15 minutes
Cooking time 20-25 minutes
Serve 2

Ingredients
For Cooking Rice
2 cups Sella basmati rice, soaked for 20 minutes, सेला बासमती चावल
Water as required, पानी
2 Star anise, चक्र फूल
Salt to taste, नमक स्वादअनुसार
1 tsp Oil, तेल

For Restaurant Style Fried Rice
2 tbsp Oil,तेल
1 inch Ginger, chopped, अदरक
2-3 Garlic cloves, chopped, लहसुन
1 medium size Carrot, chopped, गाजर
¼ cup Sweet corn, blanched, भुट्टे के दाने
1 cup Cabbage, shopped, पत्ता गोभी
½ inch Ginger, chopped, अदरक
2 Green chilli, finely chopped, हरी मिर्च
1 tsp Light soy sauce, सोया सॉस
½ tsp Vinegar, सिरका
1 tsp White pepper powder, सफेद कालीमिर्च का पाउडर
8-10 French beans, chopped, बीन्स
Cooked Rice, पके हुए चावल
Salt to taste, नमक स्वादअनुसार
½ tsp Sugar, चीनी
½ tsp Vinegar, सिरका
¼ cup Spring onion, chopped, प्याज़ पत्ता

Pot Rice
Preparation time 10-15 minutes
Cooking time 20-25 minutes
Serve 2

½ inch Ginger, chopped, अदरक
2-3 Garlic cloves, chopped, लहसुन
1 large Onion, diced, प्याज
2 Dry red chillies, broken into half, सूखी लाल मिर्च
1 Star anise, चक्र फूल
1 medium size Yellow bell pepper, diced, पीली शिमला मिर्च
1 medium size Red bell pepper, diced, लाल शिमला मिर्च
½ small Carrot, cut diagonal, गाजर
⅓ cup Cauliflower, medium size florets, फूलगोभी
⅓ cup Cabbage, diced, पत्ता गोभी
⅓ cup Paneer, cut into small cubes, पनीर
Little water, पानी
2 heaped tsp Soy sauce, सोया सॉस
2 no Spring onion white part, प्याज़ पत्ता
1 tsp Green chilli sauce, ग्रीन चिली सॉस (optional)
1 cup Water, पानी
Salt to taste, नमक स्वादअनुसार
2 drop of Vinegar, सिरका
½ tsp Sugar, चीनी
1 tsp Ginger, finely chopped, अदरक
2 tbsp Cornstarch slurry, कॉर्न स्टार्च का लीजाम
1 tsp Toasted sesame oil, तिल का तेल
¼ cup Spring onion, chopped, प्याज़ पत्ता

For Assembling
Cooked Rice, पके हुए चावल
Prepared Gravy, तैयार किया हुआ ग्रेवी

For Garnish
Spring onion, chopped, प्याज़ पत्ता

Process
For Restaurant Style Fried Rice
For Cooking Rice
In a pot, add water for boiling, salt to taste, oil and let it boil.
Once the water starts boiling. Add soaked sella basmati rice and let it cook on medium heat until 70% cooked.
Once done, strain the rice and keep aside for further use.

For Restaurant Style Fried Rice
Heat oil in a wok, once it’s hot, add ginger, garlic and saute it well.
Add carrot, sweet corn, cabbage, ginger, green chilli,
Stir fry on high flame without overcooking vegetables.
Add soy sauce, vinegar, white pepper powder, french beans and saute it well.
Add cooked rice and saute it well. Add salt to taste, sugar, vinegar and toss it well.
Now, add spring onion, sprinkle a little water. Cover it with the lid and cook for 2 minutes.
Toss everything well on high flame.
Garnish with spring onion and serve hot.

For Pot Rice

Add one by one all the vegetables along with paneer and toss them well.
Add a little water, soy sauce and mix well.
Cover it with the lid and cook on medium flame until it boils.
Add spring onion white part, green chilli sauce and mix well.
Add water, salt to taste, vinegar, sugar, ginger, cornstarch slurry, toasted sesame oil mix well.
Cook until the sauce thickens and vegetables are cooked.
Now, add spring onion at the end.
Add the cooked rice in a serving pot, pour the prepared gravy on top of it and serve hot.
